Beef Tallow

Beef Tallow is made through a process known as 'rendering' which is basically melting fat away from (in Tallow's case)scrap pieces and the offal of beef. It can also be used on bones, to extract the fat.

The fat then cools and is sold as tallow.

The "scientific" definition of tallow is animal fat is a "re-solidification" (titer) level of 40°C centigrade. In other words, once the fat is melted,Tallow then hardens at 40 degrees or cooler. This characteristic also classifies tallow as a 'saturated fat'.

One strength of tallow in comparison to other fats and oils is that the beef it is derived from is subject to FDA (Food and Drug Administartion) standards and inspections.
